If you don't mind having to work a little to play online (steamgroups, discord, etc.), KOF'98UMFE, KOF2002UM, KOFXIII, Garou beware of DotEmu but at least it has rollback netcode and movelist but you're better stick to the fightcade version unless you want to show support for a sequel by SNK in the future., Skullgirls and MKXL to an extend (great online and content but arguable developers and mechanics). Or simply the tons of old games on fightcade.
Well, I'm not really into GG barely played Xrd-SIGN- and didn't like some things like guts, hellfire and especially danger time. Maybe I'll get Rev2 in a sale but considering what you said, maybe try a little more with Baiken since you had fun with her. Read the wikis, search for tournament videos and tech, that stuff.

Try 2001 just to be certain. But it could've worked with a more polish. Seth and Dong Wang are really broken compared to others. Other than that. I wish Chang, Xanadu and other big slow guys had Armor mode in XIV. Or at least the Advanced groove buffs when he activates MAX mode.
But I love '99/2000 stages and music.
