There's three routes, but you only unlock options to see the other routes on subsequent playthroughs. Each route is darker than the last. It gets pretty brutal.

The first thing to understand about Fate/Stay Night, and anything written by Nasu, is that pretty much nothing receives official translations or dubbing. The entire basis to the English-speaking Type-Moon fandom is a bunch of weebs slowly translating shit for other weebs to read, and many of these translations are shit. In a way it's a necessity - if they were perfect, they would take even longer to put out. As a result of this, a great deal is lost in translation. So how is the writing itself? It's no Lovecraft.
So what of the story itself? Well there's generally quite a few plot holes and other issues floating around, things left unanswered, and so forth. The characters as a general rule are fairly likeable save when they're not supposed to be. The protagonist comes across as a dumbass, though as you progress through the story, you start to discover that there's a lot more to it than that.
Some people write fucking essays online about this shit, so I suppose there's that. F/SN is actually one of the weaker works by Nasu, though. Tsukihime is much better in every way besides production value, and stuff like Kara No Kyoukai is extremely good.
Sometimes, but this is mostly in Hollow Ataraxia, the sequel. Depends on the kind of person you are, in certain routes. The most frequently occurring antagonist in the story is one of the most interesting I have seen in any work of fiction, so there's that. Others not so much. The central theme to all three routes in F/SN is heroism, what it means, different views, etc.

I vastly preferred the Steins; Gate VN to the anime. I played it before I watched it so keep that in mind.
The VN is slow. VERY VERY slow. The plot doesn't even really kick in until chapter 4. The buildup and getting to know characters is crucial to experiencing it though so when the plot actually happens you're very emotionally invested.
I'll shamelessly admit that I sobbed on multiple occasions. All of the endings are really good as well. There is a guide which is without spoilers but lets you experience all of the endings in a single playthrough. Here it is: archive.is/0Nba3
The anime, while pretty good in its own right, doesn't have anywhere near the emotional impact and of couzrse lacks the alternate endings.
It comes highly recommended but be wary that the game is approximately 20-30 hours long, depending on whether or not you get all the endings.

The problem is that even though multiple people remembers June dying in the first nonary game, she's somehow alive and able to set up the second one. Now maybe that's because her life had been saved by sending that sudoku puzzle back in time, but if that were true then people would remember that she solved the puzzle and escaped, and they would have no memory of her dying. I like the game overall but the ending was dumb. I also felt that June being Zero was pretty out of character for her. Even if she was trying to save her own life, she doesn't seem like the sort of person who would kidnap loads people and cause several deaths. It would have made more sense if Santa was Zero and was doing that stuff to save his sister.

After the latest translation fix which, fixed a lot of the Russian sentence formatting mistakes and wrong words, the game is now perfectly read-able. As for the game being Russian and trying to be Japanese, luckily it's not. Pretty much everything in the game is very much Russian and it's not one of those, "We're in an American highschool, but everyone has Japanese names for some reason."
Miku's route is one of the better ones actually. In her route they filming a movie and she's actually a Russian chick pretending to be Miku, then some shit happens.

here are some great games on the DS that were overlooked: Miami Law - great, often overlooked thriller. some smallish leaps of logic in the plot. two dudes investigate a drug ring which blows up into a fuckhueg plot. conspiracies, patriotism and buddy cop action abound. the OST has a couple of tight tracks but otherwise not bad. graphics kick ass. there are mini-games interspersed which are sorta fun. time hollow - great plot. highly reccomend this one. play as a teenager who has to unfuck everything with his powers. will tug ever-so-gently at your heart-strings. Jake Hunter - Memories of the Past - GET THIS GAME. OST is sort of ass, graphics are rudimental, but the stories are very engaging and fun. the characters are incredibly likable, the stories are often touching.

1) The last choice in the game is a supposedly tough ethical choice because by switching consciousnesses with the survivors you'd be condemning them to death. This is fucking hypocritical. Almost every switcher on the team has fucking murdered an alternate self by doing this exact thing. Junpei's ENTIRE FUCKING PLAN is predicated on leaving his and Carlos's alternate selves to die riddled with bullet wounds, and Carlos himself possibly condemns an alternate version of himself to death in an alternate reality. Sigma is only here specifically because he's forced his younger self into another fucking death game. Further, if the consciousnesses actually switch and aren't just implanted, what's to stop the other selves from just switching right back? While we're at it, why didn't Junpei and Akane, who are already aware they have the ability, just switch every time they face death? Like…I don't know, the fucking casino death trap? Why is everyone a fucking moron intermittently?
2) At the end of the game, Diana and Sigma are in love. Great. Except this isn't Sigma. It's his future self. When he switches back, Diana's going to be facing the lovably immature skirt-chaser from VLR, not the stoic old man she fell for. That is, if he switches back at all. Does he plan on just taking control of this body forever? What are young Sigma and Diana going to do then?
3) Phi's here in this timeline because she was transported from the past. Fine. But the game explicitly tells us the machine copies, not transports. So where the fuck is Old Phi? Did she die of old age? Then why the hell is Delta still alive?
4) While we're at it, why does no one ever mention Delta's existence? Why does no one question a team with 4 members? Why is Delta not on the team portrait in the study? While we're at it, how do they cart his decrepit ass up those fucking stairs when they shoot the safe with the grenade launcher? And in that note, when Cuntface shoots the launcher during the Mexican standoff in MUCH closer quarters, how does everyone not die? Plus, do Cuntface and Murdercunt just leave Delta to die in that timeline? While we're at it, if Delta is there, why are they in a standoff at all. The choice of who to kill is fucking OBVIOUS. Why does everyone act surprised when you shoot him?

If you want to be a weeb there's a shit ton of light novels out there. Personally I recommend the Mushoku Tensei books. It's the book that, I believe, started the new anime/manga/book trend in Japan about someone reincarnating in a different world. It's completely translated, but the last few volumes are only MTL'ed so you'll need to put up with some pretty awful sentence structures.
Though it would help if you gave some sort of idea of what you like.

It's definitely more condensed, but it misses out on a couple of things namely Mr. Brauns daughters time fuckery and there's some fuckery with the IBN computer in one of the later episodes, I think they use it to hack SERNs email database when it should have already been stolen or something like that. I don't think it's possible for any translated work, regardless of media, to be of a high enough quality that a second hand reader could determine that the original was well written.
With that being said, there's a few VNs with decent story and/or decent characters.
Clannad, ef, Saya no Uta and Symphonic Rain would be the top contenders. Almost everything else either falls flat on its face because of dumb twists or power of friendship bullshit or the story is horrible or the characters are so poorly written that it makes the VN unreadable.

I really liked Ancillary Justice, though I doubt many people will agree on that considering it's a sci-fi book whose main race of people speak a language that doesn't have gender pronouns so everything is she when dealing with that race. I can imagine that triggering most people here pretty fucking hard before they get to actually interesting bits of the book that handle what it is like being an artificial intelligence like I've never seen before and the political power struggle that's happening in the book's universe.
I think The Last Full Measure: How Soldiers Die in Battle is also pretty good. It's more of a curiosity than a fun and exciting book though. Generatio Kill is also fun if you like military things.

The Mythology Symbolism has a purpose besides just adding background flavor, especially the religious (or Judeo-Christian if you're a prententious hipster) The character development of the MC is spot-on. Demonbane is a really weird combo.
Its a super robot mecha vn, with a certain amount of the 'hotblooded determination can trump all, never give up' attitude that typically goes with that, which wrestles with the lovecraftian elements, which would normally be taking the story the complete opposite direction, tonally.

I can't say it's really written, but my current guilty pleasure is ACE Academy which is basically about an American going to a Japanese university to pilot mechs. It's fully voiced and complete now. With nearly all VNs, there's a true ending to each route, with maybe a normal ending and a bad ending. However, this game is different in that it considers all other endings bad, even if nothing bad actually happened. The "light" endings are a name people have used for bad endings that are the endings for each route where you don't torture them and instead end up getting together romantically. It makes sense why the game still labels these as bad endings since it wants you to be a bad person, and even moreso after playing the True Route. Yes it also has a True Route, though I'd recommend doing that only after going through the true endings for all routes.
