Might, car definitely responds to weight.
For max speed I'd leave out the back seats. You get more storage, too. Leaving out the passenger seat might unbalance your ride, and IDK about you but I'm not gonna fuck with the toe after I've worked to get it straight.

Less weight means you go faster with the same amount of horsepower, since the engine doesn't have to pull as much. That's why a tiny jap car with an i4 can outrun a heavy-ass V6 Muscle car.
