Ape Escape Pumped and Primed. It will require a bit of tweaking to play and it's transparent transitions are a bit off, but it's pretty flawless.

You are probably confused by the game running exactly like it did on the original hardware. Shadow of the Colossus ran like shit. Emulation is not going to magically make it run at more than 15 fps.
