Curious about this I decided to look up about China/German relations. Especially the Sino-German cooperation 1926–1941.

Not really, the KMT were more than willing to work with the Japanese and simply wanted to be treated like equals and left alone but that was unacceptable to Japan, they were even willing to let the Japanese keep Manchukuo and territory they captured up to that point and wanted to cooperate with the Japs against the communists.
Japan had an obsessive hatred of China (which if you've ever been to China you can understand why) and a need for their resouces, so they pretty much forced Hitler's hand by giving him an ultimatum of allying with them means dropping the Chinese.
