The most fun i had platinuming a game was Dead Space 1 and 2.
2 was a little crazy with hardcore mode but it felt pretty organic and fair overall.

MGS3 is also fun to get all the trophies for, it was pretty relaxing aside for the very final part of the kerotan hunt, fuck that part.
