Coyote is a necromancer whose powers will end up shortening his lifespan and end up killing him if he has any strong emotions, thus he has to remain as emotionally neutral as possible, and smugness seems to be the best for that.

When he had Knuckles and Shadow kill the Roadrunner, Coyote had to hold his own emotions back despite spending pretty much his entire life up to that point hunting him down. He's not allowed to enjoy his fulfilled life dream too much or else he'll risk death.
