Crispy bacon has a nice salty crunchy texture that mixes with the little fat left, if there is fat left, and there should be, and it creates a good balance of texture's for the flavors of salty and fatty, not a lot of people are keenly aware of this but different flavors have ideal sorts of textures, like it would be odd to chew into something chewy and get a fatty, crunchy texture rather than a sweet one
