Uranium enrichment for weapons is a very different proposition from what the deal allows them to do. If you're enriching uranium for power generation, you only need to get it up to around 5%. Weapons-grade enrichment is more like 90%, and it's a hell of a lot harder and more expensive. Iran can have all of the 5% uranium they want, the worst they can do is make a dirty bomb that isn't any good for anything except poisoning Tel Aviv. No biggie.
