I'm using Chromium 58 with nothing but uBlock Origin, and not only am I using a dual-core i5 (with hyperthreading), but I ALSO have my CPU underclocked to about 1.2GHz on battery (it's a new option in power settings with the creators update, it's pretty nifty).
Shit doesn't lag or stutter once. Granted, because of the underclocking on battery, it sometimes takes about 2 seconds in that scenario to render heavy wepages, but that's it. Graphics rendering is the only thing that takes time. I have a YouTube video going a lot of the time, and there's plenty of juice left over for whatever the fuck.

The main problem I have with Firefox isn't its speed (in a session I've just started, even with a lot of tabs open), but its horrifying memory leaks. It seems like every 3 hours or so, as my entire computer gradually slows to a crawl, I have to "sudo kill firefox" before it causes the WM to become completely unresponsive and start Firefox up again.

IME, a lot of news articles work ok in Lynx. It's mostly the user comments that are broken, but I don't care about that. The formatting and such can be strange, but that's because Lynx doesn't care about CSS or anything besides plain HTML. But the content is there, and that's what matters.
Something like Elinks (which allows easy scripting) could be used to fix formatting problems, but I don't care that much.

Of course if they do tons of video embedding, it becomes harder, but I'm pretty much just interested in text most of the time. And even Lynx will load images into external viewer if you ask it to.

It is the Javascript programs that are normally embedded within each web page that slows everything down. If you disable Javascript (install Noscript), you'll find that things render a lot faster. I use LibreJS to disable non-free Javascript which is pretty much everything.

I guess it's kinda hard to tell. On one hand, there could be more vulnerabilities due to being so niche. On the other hand, these browsers are made to minimize bloat, so there's less code there to be potentially vulnerable.

Nouveau doesn't do auto re-clock to the maximum clock possible, you have to manually change your clock speed.

Firefox on an old 2008 Thinkpad just works on my end. You're probably running Windows.

surf sucks more than Firefox/Chromium, because it uses WebkitGTK+, which is slow, buggy, unmaintained, and full of security holes.

installing nouveau from a ricer's ppa fixed it, unexpectedly. now the performance is on par with the proprietary drivers, no manual reclocking needed.

I don't get this "need" to encode videos, much less two at a time (and while listenting to music, no less). Is this chan invaded by a bunch of youtube e-celebs or something?
Stuff I need to do: edit text files, compile small/medium programs, occasionally compile kernel & OS stuff (not including bloated junk like Firefox), use text-based network clients, use PDF/PS viewer, use simple image viewer, sometimes play non-HD videos or MP3 and such. All that works fine on any old Pentium-M laptop, and maybe even a Pentium II would work good enough.

I use cmus, and music has literally never stuttered on my computer. If I try the same thing I was describing there with GUI programs, then yeah I may have some of them breaking. The only scenario I've had here is overheating the CPU so much the computer turned off, a couple of times through the years not as a frequent thing.

Yes, most people don't even need to encode videos. But some have to encode their personal videos made with smartphone or camera. However, for personal videos you don't need 4K resolution, you don't record 10 hours a day, and you don't need realtime encoding. You can encode them on old computer without problems, it will just take more time, or have bigger filesize, but who cares?

You don't need javascript for 8ch captcha. Any browser with text + image + POST should work. Could even try to open image in offline viewer.

Right, Lynx doesn't display images at all. It can't. But you can tell it to show all image links on a page (with the * toggle key) and then you can follow one of those links. If you didn't configure anything it'll probably just try to download the image to your disk. But you can also set an image viewer program in /etc/lynx.cfg or just edit your ~/.mailcap file with entries like these:

image/jpeg; feh -FZ %s
application/pdf; xpdf -q %s
