1. during the upper paleolithic there's two relevant groups of Europeans, they are foragers related to the first AMH in Europe, they are so called WHGs(west hunter gatherers, Villabruna cluster) and EHGs(eastern hunter gatherers, very east shifted, probably related to a Siberian population, maybe not fully caucasian).
The so called Villabruna cluster seems to be the standard west Euro back then.
Now while they sparcely possessed some alleles that lead to depigmentation, these western ones seemed to lack the two main mutations that seem to explain white skin in Europeans, so most likely they were somehow tanned, like Indians perhaps.
Interestingly enough, they seem to have been almost at fixation when it comes to the derived alleles that leads to blue eyes.
So most likely they were blue eyed dark skinned dark haired robust caucasoids.
Eastern hunter gatherers however already show some signs of full depigmentation and blondism.

2. neolithic happens, an anatolian population with significant ancestry both from neolithic levant and neolithic iran plus some native European ancestry(whg-like) spreads into Europe, from Iberia to Scandinavia, and mostly displaces the original Europeans by mixing with them, this in various amount depending on the region of course.
