Just the player on their website. If you download the videos they're in their original aspect ratio.
Take this video for instance: 4:3 originally, but you wouldn't know since it's displayed as 16:9 on the site. youtube.com
If it's 960x720 with black edges to the side to upload in 1280x720 it's not going to be stretched, since as far as the player is concerned it's already 16:9.

What comes to mind is that videos uploaded in anything up to 360p remain displayed in 4:3 aspect ratio (if uploaded as such) and anything above gets stretched.

"Watch with mpv" addon + appropriate ~/.mpv/config is the way to go and it has the added bonus of being able to play any plain url videos and shitton of various streaming website videos, some of which otherwise require flashplayer.
