If you want to play during that time period in between WWI and WWII you have to use the arms armistices and revolutions mod

If you pick the right doctrines and only build industry at the start until you have mad IC, the combat itself becomes easy and playing with counters disabled makes it even more aesthetically graspable.

It's a game so you exploit the AI, that's all that it's ever going to be. I always win as Germany without leaving a single solider to man the Atlantic wall because I have motorized units close by that can kill the beach-heads at their infancy. In real life it would be a whole lot more complicated than this but it works in the game fantastically. 4 motorized divisions split in two can hold the entire west against possible invasions and partisans in France.

Of course, playing against a human player would be entirely different.

If you want an easier game overall, EU4 is the easiest of the Paradox grand strategies so far.
