s110v sounds like a good option, but it's so brittle that if you use the knife for anything other than direct cutting (like, mildly torquing it to undo a flathead screw), the blade will take damage.

AUS-10 is better than AUS-8, but neither are good steels.

440c or 440hc require a very specific vaccuum heat treat to get the proper strength, otherwise all of the carbon moves to the outside of the steel, making it a piece of shit, so only trust these steels if they're made in the USA, and even then, the ones I mentioned are better.

440B, 440A, 440(without letter could mean A,B, or C) are mediocre at best.

Avoid 420 like the god damn plague (even if you blaze it).
