Pick a weapon that you can beat the monster with one attack you know you can land, use it for the hunt in those windows the monster is recovering between attacks. Next hunt, decide a one new move you want to learn and use it too. Don't try to learn everything at one go, get comfortable with one aspect of the weapon and then learn the next thing. Speaking from experience can use the GS by just spamming the true charge, but learning tackle and attacks chained to it makes it much more fun.

Taking some QoL skills instead of pure damage makes the whole game experience actually fun, even on my almost pure damage GS set I have health augment so I can just trade blows if needed.
