It's been a big part of his character for a while and presented as a reason why he has a vendetta against humanity. Keep in mind, that vendetta is part of why he's considered a villain so it's not really shown as something worthy of praise.
With Apocalypse his whole thing seems to be about being a god in the modern world, so referencing other religions so doesn't seem that odd he'd reference Israel to a Jew that was put in a concentration camp and had his parents turned into lampshades.
Saw it today with other people who wanted to see it. Tolerable at some parts , but it's horribly slow to start. The things that I'd like to point out.

His family is killed, like they think it's a cute jab to kill Scarlet Witch by an arrow, similar to how Quicksilver got killed in the Disney movie.
Muh stronk independent Mystique knocking out huge thugs with just a punch. It's actually funny to me because there were some decent moments in the movie, and then it was a screeching halt whenever Mystique appeared on screen. She never fights except to knock one or two thugs, impersonate Psylocke and slash Apocalibs' throat and then gets choked to shit. That's all, she was pretty much a rallying flag, and even her moments as an inspiration for the other mutants felt extremely forced and ridiculous , while they'll really trying to sell you the idea of her as a cool, brooding lone wolf.
Wolverine cameo, slashes some guards, Jean taps into his mind, Wolverine runs to the forest, while Cyclops quips about not ever wanting to meet him again, whoops!
An unintentional moment would be that Apocalibs is revived due to the CIA female agent. She was being sneaky finding out about a cult that wanted to revive Apocalypse, and they kept chanting to revive him. Our dashing agent knocks out a dude with one punch, uncovers a carpet and enters underground, and once the sunlight touched the pyramid, Apocalypse revived. If she never decided to be all sneaky, the dumb kebabs would keep changing an praying. And the pyramid was buried beneath some regular house too, you'd think that ancient ruins would be a protected archeological site or something, but no, they were just beneath the city like nothing.
Overall, I found it average, but the Mystique scenes really killed the movie whenever she appeared. She really didn't have to appear at all, she was useless, even more than Katniss.
That was supposed to add depth and a backstory to his character, not add political correctness to the movie.
Why would he be any different? He's thinks he's hot shit and that mutantkind shouldn't take shit from goyim humans because they're the next stage of evolution (even though they're fucking mutants) and should logically be ruling the planet.

I just watched it today and the best part was the Quicksilver scene, but the best part about it is that it's going to make any similar scenes from the Flash film seem cheap in comparison.

the movie itself is not that bad, as usual fassbender and mcavoy own their parts very well and at the end, the real sour note is the completely inexcusable focus on catniss (not even mystique) that drags the movie down a lot because they felt the need to elevate her to speechgiver hero
