I've read the Communist Manifesto a little bit of Bakunin (mostly him critiquing Marx) and that's about it. Should I read Bookchin now or stick to Marx? Capital is too long and too complicated for a beginner I feel. If not Bookchin then what should I read next?
Read Marx and about Marx until you can get through Capital and then move on to the less influential people. Bookchin is good also.

There needs to be a better introduction to socialism/communism for beginners. I looked at the stickied reading list and they had Intro to Marx by Peter Singer I was going to read that but then I looked at the reviews on Goodreads and he seems to spend a lot of time discussing why he isn't a Marxist in the book. He is also a liberal.

This is a baseless insult. I've read State and Revolution and the manifesto, and I'll grant that I'm not a well read Marxist. I started out as an anarchist and read quite a bit of post left anarchist theory (or lack there of) and became more Marxist (and thus pro-state) as I learned more how anarchists unfairly treat figures like Stalin, Lenin, Mao, etc., in the face of the alternatives the people at the time had.

Read more Bookchin and whenever he mentions some philosopher you are interested in read some basic stuff from that one. Besides that some stuff from Rosa and the classical anarchist stuff like the Conquest of Bread.
I suggest you do this because Marx is basically the pillar of left revolutionary politics, but I'm absolutely not telling you to limit yourself to just Marx or Marxist persuasions. No, you should absolutely go read the utopian socialists, anarchists, Lenin, the various libertarian socialist tendencies, etc. afterwards. It's only good that you investigate everything there is so that you may come to your own understanding. The importance of stressing opening with Marx lies in the fact pretty much the whole left, even non-Marxist, from just marginally to almost entirely, borrows from or builds upon. With the links I provided you can easily be done with your basic investigation of him and be on your way to investigate whatever else you want.
This book should give you a good basis in Marx and Engels.
