There's no reason it shouldn't work, in fact, the fact they can get ships to lightspeed means you should be able to set up rockets/cannons that can go lightspeed as well. Imagine being able to hit someone with a giant rocket that they have literally no way of detecting it,because the mass hits before any information (light, radio waves, etc.) arrive.

And the destination the missile wants to go is where the ships are dingus. As was shown in the clip FTL ships don't even need much time to accelrate they can just pile drive you from a couple miles away it looks like. No reason not to mount the FTL cannon on your ship.
The canon could be mounted on the planet they're fighting above right now, distance is trivial expect for the calculations that the computer does for you. If you're far enough away that you don't hear about the fight soon enough to retaliate, it doesn't matter if you have FTL technology the fights already over by the time you arrive, whether you bring your own ship or shoot a missile. Of course Star Wars does seem to depict FTL communications on top of FTL travel, so I'm uncertain what the limitations on sending out a notice that a fight is taking place is.
By the way this whole "shooting projectiles at the speed of light" was already done quite well in Mass Effect one with how their guns worked.

But being on the planet is not a distance that requires FTL. They were seemingly quite close. I'm talking about shooting across a solar system. Your aim is gonna be off by at least a few minutes if not hours depending on the exact distance. And presumably the FTL comms require two ends, so you can't find out the enemy position unless they tell you or you have a tracking device.

I'd assume for a planet it wouldn't matter much as the place would be pretty much glassed with a nice hole in the middle.

It becomes an issue when you realize that it makes everyone look retarded for using all these high tech weapons instead of FTL warheads, something the old EU took care to justify.

I mean classing a planet is easy, you know its orbit anyway so you could be very accurate. I'm talking about an enemy ship.

It's not about requiring FTL travel for distance all by itself, do you understand how much force an object going FTL can impart by mere grace of going that fast? The ship in the clip went so fast that the shrapnel it left after first impant destroyed dozens of other ships too.
The computer takes care of this calculation, as long as you know where the enemy ship was at the time of launch, the time it will take for your warhead to arrive, and where the enemy ships current velocity is taking it, a computer can easily plot an intercept point. In the case of a strike from across the solar system it would only take minutes to arrive and it's implied this big fucking ships can't change velocity quickly. So, you just calculate where that enemy ship is going to be in a few minutes and send the warheaed there. It's the exact fucking same as lasers as those would also need to calculate an intercept course. We have this technology right now, it's all an anti-ballistic missile does.

There's also a problem with gravity. When too close to a sufficiently large body of gravity, a ship is pulled out of hyperspace.
