Just a random suggestion but check out Divinity 2, the Developer's Cut version. It's not quite what you're looking for but I don't think many people know about it, which is a shame because it's pretty damn good. There's a point where you can get a wizard tower and build golems out of monster parts.

Shit, most of my ARPGs have the latter. I can recommend Deus Sex: Human Revolution and FATE. I'm not sure if FATE is exactly what you're looking for, but the combat is solid and the dungeon is extremely fun to explore, what with all the random shit you can find to help or hurt you.

Have you ever played the Last Story? That might scratch your itch, I had some fun with it. Nice little secrets and interactions in town, medieval swat action in dungeons. I just wish the dungeons were more varied, one or two of them are reused a number of times with just new enemies or going through a different way, but others are unique and pretty well done

The last couple weeks have been awful probably because I'm putting too much pressure on myself for tl;dr reasons but having sore thighs from squats and cardio still feels comfy.

Tekken 7. Fighting a lot of annyoing Hwoarangs today. A lot of them have no idea how to play the game, yet they can be dangerous since Hwo has so many kicks with good damage, speed, range and/or lots of pushback on block. It can be quite amusing though once you adapt to their "playstyle" and manage to avoid the cheap moves or even better, just do what I did in webm related, that fight was fucking hysterical.
Also been playing My Summer Car, got all of the important upgrade parts and tuned the engine pretty well, it's incredibly fun driving that thing now.
