I've been interested in trying out visual novels as a genre, but I'm not sure where to start.
I've always had a passing interest in something like Tsukihime or Steins;Gate, but what do you guys think? Anything else you'd recommend, potentially even over those?

Yeah, Steins is a good place to start off as an intorduction to VNs. Then from there you just need to decided where to go. Want more mystery and story than Ever17 or Fate is also good for a beginner. Want some actual sex, Majikoi or Yume Miru for that. Want more gameplay then something with VN elements like Danganronpa or Phoenix Wright. Lots of different things to choose from.
Steins;Gate is pretty tight. Recommend fully. Can't speak for Tsukihime, but Fate/Stay Night from the same guys ranged between pretty good and pretty awful, but is also known as a good "start" for VNs.

Katahane's new translation by JAST should be out sometime soon. Muv-luv is up on steam but is all ages, waiting for the bundle of that and alternative. Symphonic Rain is also getting a rerelease with new art by the original creator. Still waiting for Grisaia Rakuen but that's not for months yet.
Wouldn't recommend Swan Song or Kara no Shoujo for a newbie

nigger after watching all four seasons of the anime and reading a little into the book i have got to say Louise is the fucking worst. In every fucking category she fucking drops the ball and in some cases its fucking on purpose.
For that matter, being voiced by a over-used voice actress is also the mark of a shit move. Seriously, whenever I hear that chick I instantly know the character will be a 2d tsundere with absolutely no character development whatsoever, except for maybe at the end when instead of saying 'Baka' for the thousandth time she fucking finally shuts the fuck up.
And by god was that a fucking light way to put Louise's character. Jesus fucking christ I want to say in the middle of the first or second fucking season best boi Derflinger literally lays everything out for Louise, BTFO'ing her out Teagan style and basically just said everything the fans were thinking. However, this changes NOTHING about Louise and she promptly goddamn forgets it a literal second afterwards.
Hell, Henrietta De Tristain is a whore who would NTR her best friend (although if I was her I wouldn't give a shit either) and doesn't know how to fucking do her job, yet she is still miles better than goddamn Louise in literally every regard. Hell, its fucking guarenteed that Henrietta has been pampered and blessed with more goddamn power than Louise but she still ends up with a decent fuckin personality god damn.
I really, really, really, hated that series and they killed off Derflinger who was the only character who was reasonable in anyway and on top of that they brought him back like it was nothing and made his sword form useless.

Sadly, you're going to have to avoid anything by Type-Moon. Not because TM's stuff is bad. It isn't. The problem is Mirror Moon, the fan translation group that seems to have a lockdown on translating TM works, has done such a bad job that English speaking people attribute Mirror Moon's incompetence to TM. A great example is how English speakers say Nasu is shit at writing dialogue, but in Japanese, the characters in TM works speak in a way you'd expect given their backgrounds.
