Just play any open-world RPG in a Medieval setting like Witcher 3 and just go full sandbox not giving a fuck

Well, unless this hypothetical rpg has some deus ex shit where pacificism is possible, it wouldn't work. Also, Witcher has you starting as an warrior, so already invalidates it. I guess Mount and Blade playing only as a merchant would work.
