Depends. If I can create a reasonable fascimile of myself in a strange new world, I will do that. If role playing options are limited and it's more of a third person action game, I'll probably roll a hot chick for eye candy.

Male because I can better relate to them and think of someone who expresses everything through actions. Like a mute hunter in MH who just enjoys their exciting lifestyle of adventure and fighting fearsome beasts of nature and even legend then relaxing in an open area or resting after a hard day's work.

If it were a cute girl of any kind, it's guaranteed they wouldn't be able to just keep to themselves most of all if they're fuckable. If it's just some average guy suited up who doesn't converse a whole lot, even prime loving waifu material would almost certainly leave them alone. I play a man around 70% of the time, and a woman around 30% of the time. I mostly play as a female character to see if the gameplay or story are any different, or to make a hot waifu (if it has a really good character creator). I did female playthroughs in Mass Effect mostly to fug Garrus.

I play as men and women equally. If the game allows character creation, I'll typically play as a male most of the time, and then during repeat playthroughs I'll create a female character for the hell of it. Sometimes I create a female character first and then go back and play as a male character. Sexuality or sexual identity or any of that shit has nothing to do with it, though it can be a motivating in some instances, I guess. I like looking at cute grills.
