Firstly, from a narrative perspective: Characters, when they are well-written, add to a story. Their relationships with other characters add to the story as well. A badly-written character detracts from the overall story–case in point, New Lara's constant whining turns people off, even though the new Tomb Raider games are supposed to be about her becoming a badass.
The key point is that relationships between characters–as friends or enemies–depend on all characters involved being well-written. And if you refuse to have any female characters in your game, you not only detract from the story's believability ("this entire planet only has guys on it?"), but you also shut out the possibility of love interests, which means all your characters have to either be indifferent, best buds, or worst enemies, which gets monotonous.
From a "MUH REELISM" perspective: As I said above, nobody really cares about realism. The main characters of games are assumed to be somehow more powerful than average people anyway, either in terms of raw strength (RPGs, shootan/fightan, etc) or resourcefulness and smarts (horror games, etc). Even if there was a hard limit on how much a woman can lift ever, nobody will give a single fuck if a woman in a vidya lifts a car, so long as that woman is She-Hulk/is Chun-Li/has Iron Man's armor/etc.
From a gameplay perspective, adding stat differences between genders only helps as long as it's not prohibitively bad–that is, -2str +2dex would encourage players to play female characters as acrobatic thieves, whereas -4 across STR, CON, DEX, WIS, and INT (with +4 CHA) will just piss people off. And recent games have done away with stat differences between genders, not only to pander to good goys, but because this allows people to play Amazonian women or Robin Hood-esque men at their leisure instead of re-rolling their stats constantly to make up for a stat penalty.

TL;DR: A well-written female character is not detrimental to story or gameplay, may actually add a dimension to the story (especially if you insist on no degeneracy), and realism was never a concern to begin with.

I wish I can post all the girls in Tekken, Soul Calibur and Dead or Alive, but here's some snippets.

Most games have the player doing lots of exciting fun stuff. Playing a character who's constantly whining and complaining and struggling to do said things would not be very fucking fun. Toxic people are the worst. Having a strong capable character who can do the things you want them to and who doesn't bore you with their emotional whining is much preferred (outside perhaps psychological horror games or VNs [not real games] where that might play in to it).
The best example is old Lara and new Lara. Old Lara got shit done and was a smart-ass in character and cut-scenes and didn't spend her time complaining. New Lara whines about everything and grunts and screams non-fucking stop and it feels more like a snuff film than an adventure.

To be honest, she is one of the best female out of that mess. If spider gril wasn't a Burch, she would gain more points.
But not the best for me.
Now, there is something that always bothered me: How "Female" are most of these characters?
In my whole life, I never met a female that would fit the personality of most of these characters. We created a version of females that just never existed. The courageous, independent, dependable lady that can act and make things happen just never existed at all. You might find a rare case when a lady did something amazing, but it's absolutely rare. I know we are talking about fantasy here, but, I I wonder if the idea of the "male with tits" isn't the engine behind most of these characters.
But, I think I need to post some pictures of characters I find interesting, so, here it goes.
