If you wanna play Gamecube games, why not get a secondhand Wii and mod it so you can use Nintendont? No games to my knowledge don't work with it, and for most games, you can force 480p and 16:9. Animal Crossing works pretty damn well with it, being capable of forced widescreen and progressive.

Off the top of my head only a tiny handful of games don't work with it (like 5-6 obscure games which sucks if you're into them) and everything that does work works flawlessly. I've got a Wii and an external HDD hooked up with it as an all-in-one emulation setup, it's pretty nice.

So I thought New Leaf came out in 2013, but I forgot that the JP version came out in 2012. I guess the spin-offs took effort away from a proper sequel. We might see one for the Switch.
I just want a game that re-creates the atmosphere of Population Growing. There's more content in the newer games, sure, but the characters have less personality and the music is less memorable. (I'd even be happy just with PG having proper multiplayer and the ability to save outside of the house.)

You could either try switching from stable Dolphin versions to development (or vice-versa) or just get a softmodded Wii.
I haven't had issues with Dolphin running the game, though I haven't played it extensively in Dolphin because I prefer playing it on console. Playing on GC and hearing the console startup is objectively the comfiest way to play, but softmodded Wii at least won't have the risk of corrupted memory cards.

The biggest appeal is upgrading and decorating your house, which is why Happy Home Designer was made. (It's a spin-off that focuses entirely on the house designing.) New Leaf also improved multiplayer content, but that isn't too useful without friends obviously. ( I think there's stuff you can view and download from online and Streetpass. Haven't touched NL in almost a year, so I forget what all it has.)
The game does require you to grind for money to do anything. Even though it's a lot easier to do so in NL compared to previous entries, if you don't like selling foreign fruits, digging fossils, catching bugs, etc. you're probably not going to enjoy the game very much.

Here is a picture of my shrine with my poptart 3DS and everything.
I'd like to think the Switch will have an Animal Crossing.
Nintendo EAD however is no doubt working on Splatoon 2.
The one improvement I'd want is being able to do minigames for bells instead of just catching bugs on an island between specific hours.
Ideally if a game has a heavy grind focus you may as well make the grinding enjoyable and varied.
Being able to turn the camera at 45° angles would also be nice.

The next Animal Crossing game will be that mobile app by DeNA, but it is anyone's guess if it will actually be enjoyable.
