Akira is good despite the plot being broken. Great if only for the soundtrack, hyperviolence, and animation. Read the manga if you want the plot, it was too long for the movie anyway.
RahXephon is like NGE with a more structured plot to satisfy the plottists, it has filler and the animation quality is sort of lacking though.

08th MS team is the only Gundam show really worth watching other than the original show from what I can tell. Some spergburglars will insist otherwise but honestly its either childhood nostalgia or absolutely average to mediocre execution with the Gundam name slapped on it. The first Mobile Suit Gundam suffers from severe autism, 70s anime-isms, and filler episodes, but it has space colonies based on real ones, mech fights obviously, and the Zeon/Earth conflict hadn't turned into a cliched self referential thing. Seemed like there was a bit more enthusiasm in making it.
Roujin Z is one of the sillier yet still violent movies that Katsuhiro Otomo wrote, its good fun overall.
There are some interesting animation compilation films like Memories and Neo Tokyo with varying quality for each short movie.
Theres more than just that but it depends on your tastes. It goes without saying but watch the obvious classics and stay away from the /a/'s garbage method of watching the current anime "seasons" like they're some sort of washed up addicts.

You pretty have to much tap into the 1970s-80s-90s (and a few things from the 00s) for your weebkino needs, the anime industry sort of broke after that and there is rarely anything good to watch anymore that isn't filled to the brim with otaku pandering, "Haven't I seen this show before?" syndrome, or even the rare yellow spotted western pandering. To be honest almost every anime in production could be randomly generated through some weird anime generating algorithm (if such a thing existed) and I don't think the weebs and otakus would notice the difference.

Nausicaä has some of the most abhorrently heavy-handed symbolism I have ever seen in a film. The film lacks subtly in the extreme. It's the same with Princess Mononoke. What really happened was the following: 1) with the advent of late night anime, niche anime could be aired on tv. 2) Anime that was in the past released as OVAs could now migrate to television. 3) OVAs/movies declined as the focus shifted to tv, or the focus shifted to tv because OVAs/movies declined. 4) Changing trends in both Japan and America saw a decline in cyberpunk, scifi and ultra-violence, which is what western viewers associated anime with, and on the other hand tv was more strict on content than OVAs/movies. 5) There was an explosive increase in the quantity of tv anime produced, meaning more of everything including shows that western viewers were allegic to. 6) Western access to anime was greatly improved and less reliant on middlemen cherrypicking things. 7) Western viewers, raised on a limited diet of carefully hand-picked anime and ignorant of anything else, didn't really understand what was happening, but they saw a bunch of stuff they didn't like, abandoned anime and have been repeating ever since that anime died after the turn of the millennium.

The western anime canon is made up of 5-15 anime released over the course of about twenty years, which is nothing compared to how many anime in total were released in that time frame. The canon is thought to represent the entirety of anime released in that time frame, but it's just a collection of exceptions. Thanks to the quantity and variety of post-2000 anime, there is a lot of anime that should appeal to western viewers, but it gets mostly ignored because people are so invested in their idea of modern anime that they don't bother looking into what has come out or is coming out, don't give anything a chance, and always assume the worst. They're also very picky and want to keep reliving their early anime experiences over and over again, and are used to every anime being 10/10 because they relied on pre-selection and have forgotten any bad anime they may have watched.

The western canon is made up of anime made by and for otaku just like a lot of late night anime is today, and there hasn't been any generational shift away from "good" otaku to "bad" otaku. The late night anime scene of today has been a work in progress since the 80s.

"Haven't I seen this show before?" syndrome exists because a lot of anime exists. How many movies have been made with the concept of "killer/spy/thief/soldier comes out of retirement for one last job"? How many cop shows are there? How many movies about an underdog sportsman or team winning the big match? How many sitcoms? And how would NGE exist if everyone had thrown in the towel after Mazinger Z or Gundam and never made another mecha anime again because it would have been too repetitive? You are expecting a level of originality and variety that would be considered bizarre anywhere else, but at the same time you are vastly underestimating how much originality and variety there is in anime to this day.

I don't know why you consider "western pandering" a problem since that's exactly what you want out of anime.

Because of the way anime is made, it has fewer limits on the cinematography and overall presentation than live action which has to dick around with cameras, lighting and sets, and is at the mercy of time of day, time of year and weather. You can also do things with animation that don't work as well or aren't possible in live action (the opposite is not equally true).

Movies are one thing, but live action tv shows really struggle visually and are almost entirely carried by writing. Which is all anyone ever talks about.
