That first part (Phantom Blood) is a bit iffy because some of the episodes are basically just a dragged on battle while you're waiting for the battle with Dio to happen but it's still necessary to set the scene, think of it as the prologue.

Other than the whole Smokey arc everything else in Battle Tendency is amazing but in my opinion that's largely due to Joseph's VA.

Stardust Crusaders is also really good if you like the side characters and don't mind the filler, and Diamond is Unbreakable is decent too once you get used to it.
