What's a fun and simple yu-gi-oh game I can play? I'd like it to be gx themed (it was my favorite) but I also don't care all that much. I just wouldn't want to play anything past 5d's

This one is probably your best bet op or you could try legacy of the duelist which has all the yugioh eras that you can play from duelist kingdom to zexal
Spirit Caller (DS, 2007).
Got the cartridge next to me right now. So many feels.
What would be best for someone who just enjoyed playing the card game to use for a vidya fix? Get 2011, or is one of the new games comfy for people who just liked the World Championship games?

Objectively this one
For one it's free, gives you a deck that eases into other summoning types like XYZ and Synchro.
Can play through Duelest, GX, 5D, Zexal and Ark V era so you can chose simply Duelest and GX and get a full story mode following those while never seeing a Black or White card or pendulum.
I thought it was pretty fun to play through all GX era with gem knights
There hasn't been anything quite like the World Championship games since. Duel Carnival was butchered on localization and shit anyway, while Tag Force Special was JP-only.
Personally, I'm partial towards WC 2010. Best part of the 5D's era (end of Dark Signers arc), and AI that isn't slow as shit like 2011's.
That is really quite disappointing, any word on if they will bring it back? I will give 2010 a look, last Yugioh game I played was 2006 because that was the meta when I stopped playing. How much of a wild ride am I in for?
I'm just here for Alexis porn.
