Make the protagonist and a pure force of plot progression that's likable enough and possible to root for.

Sonic, Tails, Knuckles and Amy are the classic quad as far as I'm concerned. Generally the first three are the go-to for extra characters, and Amy is one of the more popular choices. She's a parkour/acrobatic-goddess when you're good at the game but if you're new she's fucking difficult due to her different playstyle.

Personally I'm fairly sure that if you made a game and threw Shadow and Rouge in there as the extra characters, leaving you with six, nobody would complain either. Honestly I'm curious to see how Rouge and Shadow would work in 2d Sonic environment; How would Shadow be different from Sonic? Would he be more slide-y and feel more like a strong gust of wind rather than a flowing river? I could imagine him having some acrobatic skills as well as some very decent destructive power. I can imagine him being able to stand on badniks before launching himself off and destroying them, using them as makeshift platforms because he's an edgy rebellious fuck and he doesn't give a shit about the rules.

Rouge might be like a mix between Amy and Knuckles though, really. Not sure though.

I think any character can work well as long as they aren't that different from the base Sonic gameplay of platforming through levels at a speedy pace and destroying robots. The disdain towards the side characters and the cries of "SONIC ONLY" mostly comes from Sonic Adventure and its derivatives, where characters usually took the form of shitty, slow mutations of the Sonic gameplay (see: Big the Cat and 2/3rds of the levels in SA2). Sonic Advance's Amy gameplay is probably the farthest length you can stray from the base gameplay that still works well, imo.

You don't have to make every character just like Sonic, that's another reason why level design exist.

S3&K handled this right. It has Knuckles and some Tails routes, especially Knuckles. While Tails was still close to Sonic and had not a lot different areas where only he could reach, Knuckles was a bit slower and couldn't jump too high unlike Sonic while he could fly, climb and break walls.

We can expect the same thing from Mania, Taxman's Sonic 1 and 2 mobile ports have some Knuckles routes too.

It wasn't necessary to play every character to complete the main story and the game felt longer because Knuckles still had many levels with alternative routes and a little bit different boss fights. Knuckles and Tails were available from the start too and Knuckles also had his own story which was unrelated to Sonic himself. In both Adventure you had no choice but to play every character, story of each character was also related to each other.

What he was talking about was how S3&K handled it. While all the characters play somewhat differently, they still all follow "run and jump to get to the end of the stage." The Adventure games changed that, though, which is what he was explaining.
