It's made of Carrara marble. Pure white was preferred by artists not because of it's color but because it has the fewest geological flaws reducing the chance for fissures that are the great fear of any sculptor.

The marble on the walls behind the Pieta are visually beautiful but they are unsuitable for carving. But they look great as a background.

Maybe we could take down the statues ourselves and preserve them?
