Because Christians only loosely adhere to the the Old Testament, largely as a backdrop. It's the New testament that matters, the religion doesn't exist without it whereas it could potentially stand without the Old testament, it would just make things confusing.

Also the original written jewish texts aren't as much the problem as their oral tradition which transformed the religion into the talmudism that we see today. Christ was basically the first major critic of those rabbis and pharisees that were tainting their religion and they killed him for it.
