Just so you know I don't know much about this game since I didn't play much or read into it, but this is as much as I can give with my knowledge. You can say sans is a on the fence neutral who doesn't see a point in stopping humans for he doesn't see the threat in them. His brother is a scared soldier who can't bring himself to kill a human because just like sans he doesn't see the threat. This Undyne is like you stated an Nationalist. The King is a representative that acts as the power that rules, but the flower is the true power behind the seat (the jew). Mommy goat is a pacifist that doesn't agree what's going on and doesn't want there to be any conflict between the monsters and humans again. I don't know anything else beyond these characters.
