I have gotten some similar Faraday Cage bags, but they are not the greatest quality, unless you double-bag some of the newer electronic equipment (like newer smart phones).

There are a lot of companies that make these baggies, each likely different qualities. Sometimes with the newer iphones you have to double-bag them because the signals are very very strong and will still penetrate through the first enclosure. Double-bag it and it should work just fine. To test it, call the cellphone that has been enclosed. If it responds, then you'll need to double-bag it and test it again. With a small radio, leave it on and enclose it. Then listen carefully, if you hear pure static then it works just fine.

If you chose that, you only have yourself to blame.

Proof? Any at all? iPhone boot chains are solid. The bootROM is hard coded and controls booting and full device resets. So when you flash an IPSW file in iTunes, you're restoring all software on that iPhone except what's in the hard coded bootROM. The bootROM allocates and unknown amount of system RAM starting at 0x0. Once it loads itself, it looks for a serial connection and which buttons are being pressed. If it sees home+power being held down and an Apple able is plugged in and sending power, DFU mode is triggered. Every single stage in the bootchain goes through signature and file size checking. If any requirement is not met, the phone reboots. The CIA would end up with a bunch of bootlooping phones.
