Well on Horde you had emaciated Undead with their own cities and areas and culture, the gigantic Tauren had Thunder Bluff and their super relaxed hippy shamanism, bulky Orcs with their militaristic shamanism and lanky Trolls with their voodoo, then on Alliance you have standard humans, purple wood elves, and then two races of tiny tunneling mountain people with an affinity for engineering.

Orcs and Trolls managed to share a capital while feeling like visually and culturally different races, Dwarves and Gnomes didn't and the Dwarves had a lot more going on in the rest of the game.

I know of exactly two settings that gave dwarfs underground farms. One is Dwarf Fortress, and another is Dungeons & Dragons (presumably Pathfinder as well), but only in certain modules.

Beyond that, even a flourishing underground ecosystem is not nearly enough to feed a large civilization. There's a reason troglofauna are so small and insubstantial.
