I don't know if these jobs are as common as they used to be, but you could be a fire lookout in the American West. You basically sit in a tower by yourself for months in remote forests. You have to radio in to check in and report conditions regularly, and if there's a fire, of course, but you might not see another person for months.
Jack Kerouac and Gary Snyder had fire lookout jobs back in the 50s and 60s. Kerouac's book Desolation Angels is partially about his stint as a fire lookout on Desolation Peak.
