Since this seems like a /fit/ thread I'm going to be a massive fag and ask for advice.
I am on my third week of working out and I have been trying to achieve otter mode or at least be liberated from skinny fat. I am 6'1 and weigh 165 lbs.

Your diet isn't completely horrible because at least it is not complete trash, you just need some more protein in my opinion. The turkey in your sandwich at lunch is good. Eggs, bacon, chicken breast, fish, steak, porkchops are the types of things I eat to get protein. Assuming you are lifting you will want that protein to help build some muscle.

Stop doing cardio, lift at least 3 times per week focusing on compound motions, and eat A LOT more. Worry about losing fat after you've gained muscle; trying to do both is extremely slow, but taking off the fat will be very fast once you've got some muscle on you.

Another thing: I cannot stress enough how important it is to do compound motions rather than isolation exercises (think benchpress, deadlift, squat instead vs bicep curls.) This will put the most overall strength on you the fastest. You can worry about working individual muscles to your aesthetic preference after you build some general strength.

Basically, you need to do this:

Month 1-3
Gain muscle! Low-rep, heavy-weight, compound lifts at least 3 days per week + lots of food. Feel free to do light cardio ONLY if you're making good gains and it does not affect your progress. You will not get better-looking during this phase, but you'll feel muscles becoming more pronounced and dense throughout your body. Keep your diet clean to prevent fat gain.

Month 4-5
Cut fat. Rather than cutting calories a lot, start doing a lot of cardio. Make sure you continue lifting, but you can cut back to twice per week or possibly once per week if you're not losing strength. The goal here is to lower your fat to 17% or so. Go lower if you want for aesthetic reasons, but don't overdo it: you need to maintain your strength gains as well. You will start looking pretty good during this phase: you will appear lean and very well-built, but you will not be "jacked." This is probably what you're going for.

Month 6-8
Now you can switch to a more balanced routine: lifting twice per week, cardio twice per week. If you want, you can add in some isolation lifts, such as bicep curls, to address any certain aesthetics you want. If you're eating clean, you don't need to think about how much you're eating as your body will begin to crave food automatically when it needs it.

Continue on Month 6-8 cycle for as long as you want, as long as you're still happy with how it's going: you want to be making modest improvements in weightlifting AND cardio constantly. If you hit a plateau or want to boost your strength, start over with the Month 1-3. Or if you want to cut more fat, do Month 4-5 again.

Regarding cardio: try to find a sport or activity that you enjoy rather than just running or biking. Better yet, do something that involves compound motions and builds strength at the same time: rowing, cross-country skiing, backpacking, etc. Martial arts are a great form of cardio too. Gymnastics is probably the BEST form of cardio as it also has a significant strength-building component; go look at some pictures of male gymnasts and try not to drool over their bodies.
