What russian scientists did was actually different.

They didn't switch the heads, they didn't remove one's head and put another on that place. What they did was to put one extra head on that same body.

And was not like "just a head", as we can see in the photo that 6132834 posted, it as a good chunk of the other dog's body (like a part of his chest and their front paws).

the second dog had no organs other than the brain, the legs were left on so that they could check if the muscles were still operable, and to have a better idea of how "alive" the head really was after the transplant.
On later dogs they also connected up the food pipe so the second head could feed and demonstrated it was still able to function properly in this capacity.
The reason they left the head of the "donor" dog on was that this mean they could let the dog live normally after the operation. with the other full head transplant the body has to be hooked up to life support as there is no way to connect up the nerves, all they did is use the artificially kep-alive heart in the body of the donor to provide blood to the new head.

In terms of what was learned doing it again with monkeys and removing the donor head achieved nothing new.
