I could work as a fisherman/cook and help building the wall/fence in between fishing and cooking.
In the best case scenario we build a completely self-sustaining community.

We have plenty of resources, and with the people here generally being eager to learn we can have skilled workers to go with them.

I also suggest doing a time share type of idea, if you want to go really rural. Basically, you buy a cabin and plot of land. People live their only part time. Maybe a month at a time. Maybe less maybe more depending on their situation. This would help transition people to full time settlement. The goal would be to have someone living there year round. Time away from the site can be spent with a regular job and trying to get a waife and more people to buy in, as a completely separate community is hard to recruit for. Once you get enough people to crowd the cabin, you expand with more permanent buildings on the site.

As a Vermont resident I'd recommend Vermont for a few reasons:
1. There are practically no weapons regulations outside of the National Firearms Act and other national regulations. If you put your mind to it you could easily make your own arsenal that would rival any one of the police armories in the state, automatic weapons included.

2. Vermont is a dying state, with most of the young population residing in cities and attending the local colleges. Outside of the cities there are many old family properties that have fallen into disrepair as the young family members have moved away, leaving the farms to stagnate in the hands of their aging parents and grandparents. Older folks are actually happy to have younger folks move in to the countryside. To that end, there's a good deal of land available for new buyers.

4. Almost all available land is somewhat forested, providing resources as well as cover for any compound that you would like to make. Add to this the amount of dirt roads in the state and many sites can become inaccessible by conventional automobiles from late autumn to mid spring.

The problem with most of rural Spain is that its very dry though, so growing crops is gonna de difficult unless you want to plant stuff like olives or other trees which grow well on hilly, rocky slopes.

There's also an awful lot of salt seeping into the ground water due to irrigation which makes ground infertile. Spanish have been rather incapable of water management until recently which means some of your land might be badlands or the soil is washed away completely
