Together they launched an attack on Valinor (the place in the West all the elves were going), after which Morgoth promptly betrayed her. The repercussions of that attack led to the creation of the sun and moon, and sparked the War of the Jewels which defined the next several thousand years, including the sinking of several countries including under the ocean.
At some point after fleeing Morgoth and his army of Balrogs, Ungoliant disappeared somewhere, and probably devoured herself once her hunger overcame her. But before that, she gave birth to a race of Giant Spiders, including Shelob. Note that the pass Shelob lived in was named Cirith Ungol.

They do more than not "capture the essence", they completely fucking reverse one of the points of LotR. The ending was completely changed. By omitting the Scouring of the Shire they completely removed the fact that there is no simple "There and Back Again". Frodo et al may have saved the world, but things could never go back to the way they were; the Shire had lost its innocence. In the movie they come back, and everything is right back to normal as though it all never happened.
And then there's the fact that the movies had Frodo push Gollum into Mount Doom, instead of the deus ex machina of the book. It's obvious PJ thought having him trip on a rock and fall would be too anticlimactic, and was willing to sacrifice the significance of that in favour of something more satisfying to the average cinema-goer. The fact that in the end, nobody, not even Frodo could overcome the temptation of the ring and destroy it, and that the best any mortal could do is bring it there for Iluvatar to give the final push, is ignored.

In a way yes, but there's still nothing there that could be used to argue for Shelob turning into a woman because the entire point of Ungoliant and her spawn, including Shelob, is that they're the embodiment of the nothingness that was before everything was created.

In the Lord of the Rings books, Saruman doesn't get stabbed at Isengard like he does in the movies. Instead, he flees with remnants of his forces to the Shire, so Frodo, Sam, Merry, and Pippin return to find their home industrialized and ruled by a puppet dictatorship. They then have to lead the Hobbits in a revolt against him. It was the last battle of the War of the Ring, and 19 hobbits died.
The movies replaced this with sunshine and flowers.

You really, really should read the books. At the very least read LotR, and if you can handle them (they're not for everyone) read The Silmarillion and The Children of Hurin.

Ungoliant (Shelob's mother) was an evil spirit/eldritch abomination who, if I'm not mistaken, was explicitly stated in the legendarium to have "taken the form" of a giant spider when came down to Arda, implying that she had shapeshifting powers and appeared as she did by choice.
It stands to reason that Shelob would have at least some of her powers, and using a human form to meet and deal with mortals could explain how she teamed-up with/blackmailed Gollum into betraying Frodo and Sam (then again, talking animals were present in The Hobbit so the could and probably should have just had her talking to Talion in her natural form.)

I thought Gollum lead the hobbits into Cirith Ungol so they would get nommed and he could keep the ring to himself.

I can kind of understand why they skipped the scouring of the shire in the movies
in the book, it's a cautionary ending about how defeating the big evil doesn't remove the world's smaller evils
in the movies it would have been an anticlimax. Aspects of it did make it into Galadriel's mirror vision in the extended version though.

Of you want to get technical, them dragging Celebrimbor and his personal history with Sauron into this slop of a "tie-in" game is them starting to dip their toes into the last pure pool of fantasy literature, they're just being oddly cautious and starting in by fucking with one lore figure with a direct tie to the "current events" of the original trilogy at a time.
Just wait another few years and they'll probably do a full-on Assassin's Creed knockoff where one of the Gondorians uses a magic artifact to travel back in time to Numenor to see firsthand it's corruption and destruction by Sauron, replete with all manner of sensationalization and canon defilement of Numenoran culture.

I remember it being mention that at some point when Gollum was running around trying to hunt Bilbo, he blundered into Shelob's Web and only escaped with his life by promising to lure bigger prey to her cave. That and before he actually brought the hobbits to her he went ahead while they were sleeping to speak with her and agreed to feed them to her if she let him leave with the ring. It's been a couple years though and I might just be having delusions though.
But that does bring up another point; Shelob is never shown or stated to have any of her mother's intelligence or magical abilities, which where already pretty limited outside of her ability to increase in size from feeding on light.
Her being able to transform is just a tiny aspect of them turning her from a rougher animal in Sauron's turf into some scheming sorceress figure with greater ambitions than sheer hunger that's trying to usurp Mordor and can fight against Sauron and the Nazgul directly. I'm surprised more lorekeepers aren't complaining about that more.

And the funny thing is, I would have had much of an issue with the move if they hadn't taken it so far.
Shelob is still half-cosmic being, I can accept her having some measure of sapience, cunning, and magic capacity, despite her animalistic natures. You could do some cool and creepy things with such a being as a proper character in the right setting.
But even with Ungoliant, her powers were not an active ability so much as an innate power to negate and undo Light Magic, and the intrigue and power-politics between her and Morgoth never got more complicated than "Valar feed me shit" and "Morgoth you piece of shit I see you hiding those gems you promised me behind your back".
Turning Shelob into a full-on rival of Sauron in a turf-war when he thought of her as a "stray cat" in the books is just taking too much liberty for me, unless we're gonna turn Sauron back into Tevildo.

Even the books don't make it clear as to whether or not she dies. Intentionally.

Sauron himself was a scheming backstabber, and the orcs knew of her and to avoid her area if possible. I find it very unlikely that someone like that would allow another like himself around. Even ignoring everything else, that is just fucking retarded. It wasn't even like he was all that weak by the time the Hobbit happens, he was still a capable enough of a sorcerer to cause rumors of a necromancer to spread.

I remember when I first read the Ungoliant and Melkor`s tale, It felt amazing to link Shelob to such an old and crucial part of Tolkein`s lore, this game could attempt to do just a speck of what the book did and it would be remember forever as a must play for any LOTR fan, instead they use [Current Year] for cheap publicity.

After Sauron gotted wrecked in Dol Guldur he returned to Mordor and started preparing for his ultimate war on the Men of the West and the Elves. He knew that Shelop was there and he found it kinda amusing. For him it was like having a semi-rabid dog living in your front yard that eats anyone who tries to get inside. So he decided to feed her orks now and again and just leave her be otherwise, as she was powerless to really threaten him especially since she never left her cage 

I guess you missed the part where the protagonist of the game and his elf butt buddy are forging another Ring of Power for whatever insane reason. I thought the whole idea behind the ring was to ensure Sauron's survival even if he were killed. So long as the ring exists the majority of his power will be kept safe. What does the PC gain from making a ring, especially when making such a potent magical artifact in Middle Earth always takes something away from the maker?

Books are like video games, in that it takes effort and investment to get the most out of the medium, and that colors your perceptions of it's quality. Books only SEEM like they have better narratives, the way that games SEEM to have way better narratives than they actually do. When you sink 80 hours into some trash RPG, you're going to come away either confusing info dumps for actual narrative depth, or just lying to yourself because you don't want to admit you've just wasted $60 and over three days of your life.

Even from the trailer where she features, it's obvious that it isn't shape shifting or anything of the such, Shelob is indeed still a Giant Spider.

The image of the woman is an effect of Celebrimbor's spirit infesting and animating The Ranger, along with Shelob using magic to disguise herself. I think there is also Ring Magic involved, but the main point is, it's all a sort of mental trickery.

As the game goes on, more and more that image is going to flicker and fade, until near the end game She'll appear fully as a spider, and The Ranger is still going to be okay with it. The entire narrative is going to be built around how forming Webs of Lies and Truth and scheming ultimately entraps you, and can make you someone else's prey/prize if you arn't careful, probably ending with the player fighting Shelob, only to have her do more trickery [taking the image of his dead wife] and escaping into the darkness.
