Stop pushing this meme. People had no problems with Oneshot, the threads died due to disinterest.
People had problems with tumblrtales fandom, not much else.
People had very real problems with NITW. The story is crappily written and there isn't even puzzles. It's a walking simulator with easy rhythm games, and Holla Forums had at least 4 threads examining every part of it to call it's every aspect shit.

They're not the same category, at least tumblrtale is a game and Oneshot's(U+200B was here) story isn't shitty and has an actual climax.

In response to OP: the "quirky indie game" has always been a thing, and in this post 2007 space what's changed is an increased social media presence on the web along with more formal cooperation between indies and console companies/publishers, the most likely thing to happen is also the most boring one where it is just a trend, but a long lasting one, where with each coming year less than half a dozen indie games will be released with any fanfare, become inducted into the autism sphere of general fandom, and will usually just remain a composite that slowly dies off over the coming years in favor of fresh meat that seeks to emulate the successes of the previous year. A common trait I see in the three examples you have given that I will predict will show up in future titles will be a minimum of gameplay elements like rudimentary battle systems or puzzles that will be used as an excuse to not call them walking simulators. As for the politics, it will likely stay in that state where it's intentionally ambiguous whether a given character is gay because of an agenda and the developer/creators will stay mum on the issue.

Serious question here, what the fuck happened to Undertale between the demo and the final product?
It felt like so much shit was underutilized, characters are rushed out the door, and the two extreme endings are almost completely unfinished. There's evidence that he was going to do something else, see the things in the demo, the neutral paths all leading to different endings, and the hard mode that should have been in the game. The demo didn't seem to be heading in the tumblr direction, but heading into a point where one could classify it as an actual game, what happened?

While there's a bunch of interviews of different people who worked on the project that can help shed light on parts of the process, the change in game ideology is probably not among them. Maybe there's a doc or blog or something that collates all the important bits, maybe I'll do that myself sometime in the next week so I don't have to look things up every time I write a big fucking block of text about this shitheap, but if you want an informed opinion, I'll say I think it's because Tony was like one of those /tg/ writers who don't really care about the game mechanics but like writing fluff, so it was near impossible for him to figure out how to shunt it all into a game.
The basic layout of each area having some unique theme and a major character associated with it is likely Tabby defaulting to an area format more like the demo after giving up on making a more interconnected world like the Mother games. The boat transport system and having the characters have updated dialogue after every new area, along with the post pacifist victory lap is evidence of this, since it is much easier to change a bank of text for each section of the game rather than say actually changing the characters themselves.
If you want to find out a bit more for yourself, your best bet is to find an archive of the interview Turok did with The Mary Sue. Summarizing it, Tuber was completely unprepared for game dev and basically had to mooch almost everything except the music and some bits of programming from the other people on his team.

Addendum: Tonks also did a good bit of concept art as well.
