It seems there's frequently a human, a warring race, a hivemind race, an insect race, a tech race, a jew/trader race, some of these overlap. Am I missing anything?

I mean, this broad strokes analysis doesn't 100% work. You need some differentiation between tech and robo, and you missed science-magic/psionics.
Eldar are technologically advanced and have magical powers, but there's also the Necrons. Then the Protoss are like a Warrior race that's also technologically advanced and a psionic race. But then they're split up into the stealthy Nerazim, the direct Khala, the robo Purifiers and the evil Tal'Darim.

For my own purposes, I made 5 categories with a race per pair. It's kind of forced, but it sort of works.

This exactly, reminds of this stop-motion film where everything is a spawn of genetically mutated humans. Exploring government systems and utopias/dystopias as-well as human nature and religion, and science the possibilities are endless. Surprised this setting hasn't had alot of exploration in fiction.

I liked the Covenant as it was a pretty neat idea that not many forms of media take on. An alliance of different aliens who join for various reasons and are vastly different is much better than "lol we're the same race but sometimes we have mutations so there's a sniper class and tank class xd"

space zombies that turn out to be aliens that are actually cyborgs that are secretly full robots but are just puppets for transdimensional beings which were yourself all along in the future past

From the Halo games: Hunters, Engineers, the Flood, and if you actually read the Forerunner novels, the Forerunners themselves are all pretty interesting and non-generic.

Hunters in particular are giant colonies of like 2 foot long worms (lekgolo) that form hiveminds in different shapes. The giant 12 foot long armored bopeds you fight in the game are just one of the forms the colonies can make, Scarabs (the giant 100 foot tall spider tanks) are another, the worms just pilot the frame. Also, for the bipeds, they fight in pairs because colonies split in half into pairs when they get too big. They were also one of the only covenant races to achieve space flight on their own, like to compose war poetry in battle, and generate electric fields like 30 feet around them to feel things. the worms themselves, when not in a colony, basically act as miners and excavators for forerunner ruins for the covenant since they eat metal and minerals,

Engineers are floating jellyfish esque creatures that have gas bladders they can regulate, and are actually machines made by forerunners that are just built on a molecular level so unless you look at them through a microscope, they are indisguishable from actual organisms. Their tentacles split up into cellular sized cilla and they can repair and rebuild machineeery super easily with those, and "reprodduce" by using those cilla to just construct a new engineer from raw materials on a ceullar level.

Not gonna explain the flood/forerunners because spoilers.

Also, even if they are sort of generic aliens, I really like brutes, they have a really pleasing blend of rhino, gorrilla, and bear traits that feels unique even if it's still a bit earth biology centric. The fact that their homeworld and soceity is baically just mad max helps too
