GC games relied a lot on gouraud shading like the N64 did and used textures only on some spots. The Wii used textures everywhere so they had to make them look gritty and shitty to compensate.

There's nothing wrong with the aesthetic of say Resident Evil 7. It will look significantly less good ten years from now, but that's the trade off for having great looking realistic graphics today.

Melee had a much better art style IMO because in that one, every character had its model uniquely made from scratch to fit the game. Brawl meanwhile lazily took the official models from other games (or even from Melee, like the Ice Climbers) and slapped hyperrealistic textures on them.
Compare how Mario and Link look next to each other in each game. I know one character is supposed to look more realistic than the other but still, in Melee they look believable next to each other while in Brawl Mario's head is fucking gargantuan due to using his generic model.
