Also, you'd want to be low-profile in doing all of that, so try to reduce living costs on the side, so it requires less to be self sufficient. Maybe build or sig your house innawoods. Try to find out what kind of surveillance methods your police uses, if they fly over once in a while with infrared helicopters, you might be screwed, even if you're underground without the proper insulation systems.
I assume you don't know chemistry and aren't interested in it for itself, I wouldn't bother making chemicals then. It'd be pretty hard getting the chemicals you need and chances are you don't have the equipment or training to work safely.

growing weed is less easy, but it can be learned. Using composted super soil makes it unnessecary to add additional fertilizer usually, but growing a single batch may take a few weeks extra, guide for that here: growweedeasy.com/organic-super-soil
You'll also have to make a choice of growing inside or outside.
Depends on your surroundings probably. You can probably always do both, I live for example in the most tightly populated area of europe and there are still forests and parks big enough for people to grow weed in. (I recall one plantation was found because they found the package of a special weed fertilizer in a nearby dumpster)
Outside is easier to prepare and usually results in bigger plants (though, if done right, you can get big plants inside too), but it might be found easier, so it's less sustainable. At least try to prepare a spot where small plants can be grown without much damage from the surroundings and make sure it gets good sunlight (sun is mostly in the south if you live in the northern hemisphere), if you've done that then there's not much else you can do except water them, check for pests etc.
If growing inside, I'd suggest tou try to get LED lights as growing lights. They aren't cheap, but they'll last very long. Get a LUX meter too so you can optimize light levels for your plants.You want a minimum of 15k lux and a maximum of 80k lux. I'm not sure how well they work with LED lights, as they have a strange light spectrum, but you can otherwise calculate how much lux your plants are recieving if you know the power (in lumens I guess? Again, LED grow lights are different from regular lights), the distance from the plants and the angle of the light (does the lamp spread the light in all directions, or does it just shine downwards?)
Learn how to clone the plants properly too, and maybe get some equipment for it, you'll save on buying extra seeds if you do that.
Anyways, try to find good guides and docus on it, because there are other details I disregarded like hydroponical systems and topping plants and harvesting etc.
Is hard, needs a big initial investment if you want to do it right.
