Because they want to fit in. It's not enough that you enjoy video games, oh no; you also have to live a desirable lifestyle that the audience can relate to or aspire to. That way, they can say, "hey, look at this perfectly intelligent, physically fit, attractive, well adjusted normalfag! he plays video games and he's also got his life in order! Therefore, because he plays video games, lady luck will rub her tentacles on his opinions, and make video games hip and trendy!"

Now, you don't have to actually watch any of his videos to realize that A) his pseudonym is "ComedyShortsGamer" which implies that his channel will have something to do with video games and B) none of his videos actually have anything to fucking do with video games.
There are plenty of other examples you can find for yourself, but the main point is that people just want to appeal to an audience to get those shekels, and video games happen to be the hottest shit on the block though this trend is starting to die down, and as a result you'll find channels that used to be dedicated to only video games that are looking to expand their content in other directions

Because that's the point of a stream, people watch for the people streaming, their personalities, all of that and not the game being played. It's somewhat similar to how camwhores work, putting an emphasis on the "relationship" with the viewer rather than the content itself.
I've watched a few streams and that's the reason I did. And then left as soon as the streamer got hang of whatever software they use for pointless intrusive overlays. I can deal with a simple logo and like a twitter reference but you can fuck off when you start playing shit sounds and gifs and shit.
