I would imagine part of it has to do with what you see happening with DC's movies.

The amount of people and even the amount of ROLES that exist are an amazing leap by a couple orders of magnitude.

In essence, the tools have made the process technically simpler but now it is far more complex in just a process/procedure sense.

Fidelity isn't cheap, the fact that a game like NMS got made is mind blowing because usually you don't see this kind of budget spent on an experimental procedural game. Instead they normally focus on much more controlled and safer experiences, like third person or first person shooters that take place in a corridor or if you want to gamble a bit an open world game designed for asset reuse like Ubisoft/Bethesda does.

Animations, textures, modelling and so forth are much more expensive these days. You need a team of hundreds to make a single game with acceptable graphics to the majority of consumers.

No wage labor, capital or market competition are involved in the creation of such a product.

All established companies have adopted diversification and franchising as their primary strategy, instead of creating niche and well made content. The idea is to both dilute the original game with more and more poorly implemented features which might each appeal to someone enough to justify their purchase and surround it with a dozen different related products- cosmetic items and skins, purchasable in game currency, DLC, mobile phone apps, promotions, and so on.

Now, you are wrong to just assume this process will lead to collapse. The creation of niche products used to enter the company into a symbiotic relationship with their niche demographic- even if we ignore the likely relatively higher IQ of computer users hence gamers in the early days of the industry compared to now, it still remains that in such a dynamic the players will simply spend more time playing the particular kind of game they enjoy, and their feedback will evolve the developer's direction (since they are only focusing on a very specific kind of person) such that they are essentially coadapted.
