I'd say the issue is building high instead of wide. Big, imposing square buildings with thousands of windows – it's like a fucking insect hive and causes extreme crowding due to the population density. Not to mention the psychological effect when you are constantly walking among these giants, towering over you and casting everything under their shadow. One of the reasons why the Church built their cathedrals so big was to make the visitors feel astonished by their maginificence and feel small in comparison.

I will provide an example of a "wide" approach – the city of Brno(pic related), the second largest city in Czech Republic. There are very few highrise buildings, and greenery is a common sight. Thanks to building wide, the streets don't get crowded no matter the time and you have a clear view of the sky wherever you go, unobstructed by skyscrapers. The city thus feels much better to be in, since the trademark rush and hustle of a big city is nowhere near as prevalent.

I might make an addition - the shape best suited for a person would likely be reflected by the landscape that person dwells in and comes from. Germanics are well suited to pointed peaks, steep inclines, exposed knee braces and other Nordic style designs. The English Saxon would be well suited to hobbit holes, as they fit into hilly and grassy meadow lands. I am not a fan of too much curve, because where I am at home is where the mountain meets ocean. Thats why I prefer sweeping roof edges (barrel tails), big rafters, post and beam, and large windows with emphasis on natural light. Besides, even if Gabled roofs are pointed, they are as you say reminiscent of pines or mountains, which still gives them a more natural vibe than the typical skyscraper's oppressive slab of metal has.
And if you look at typical square desert dwellings that usually look more like cubes with flat roofs, these are also normally tied into the landscape in colour and have more rounded edges.

I suppose it all can be boiled down to how unnatural or imposing a building is. It's one thing to have a great keep or cathedral rising up in the middle of town, to remind the people who their rulers are, but when you saturate the city with skyscraper and pollute the skyline, you get a feeling of drowning under the uncaring gaze of steel titans.

Even a place like Manhattan could still work though, if it was built completely differently. Keep the lower streets purely for car travel and have all lower floors for warehouses and offices where you're not supposed to enjoy the view anyway, then have the actual walking streets built in suspended walkways higher up, with lots of greenery and parks on top of larger buildings. And make sure all residential areas, restaurants and other recreational areas are on the top. That way you could still pack the same amount of people and floors in the same space, but it would be a lot more pleasant to actually live there.

I honestly can say the industry has pretty much gone to shit. Architects today are literally slaves to liability and cost restrictions. One hundred years back, the architect may only need to make 5-10 drawings for a large scale building (say a school for example), and work with carpenters and artisans to get it done right. Today, the same building would require hundreds of pages because otherwise our asses would get sued to hell and back by the client. There are good contractors out there that emphasize good craftsmanship, but most clients prefer someone who can do the job for cheaper. As a result, we have to draw every single detail and corner possible in the building because the cheapo imported contractor does not compute how to do a simple fucking floor base detail.

This leads to a problem where, the focus on design for the good architect has now been turned to making quality architectural details that no one fucking notices or appreciates.

Most of the buildings you see today are a product of crushed dreams and compromise. Some architects may sometimes have clever and beautiful ideas, but they would never be realized because of cost and the client's personal taste. Some architects have accepted their fate and just make the cheapest and most functional rectilinear building possible. I know some of you may not agree with it, but my personal taste in architecture aligns more with what Hundertwasser is doing (pic 1 related). His manifesto against straight lines will resonate with some of you. Here is an exerpt:

Second architect user here. Architects are considered a commodity, like graphic designers​. All the real estate developers give a fuck about is maximizing square footage while paying as little as possible for the building. That's why architecture has gone to shit. Plus the cost of material to build shit like a building with flying buttresses made out of concrete makes cost skyrocket. Most of those old cathedrals would never be made today because the cost would be in the billions of dollars and square footage would be "wasted" on the flying butresses when you could just make a large square office building and extract the most rent from your commercial tenants. Real estate developers, kikel or goy, always want more commercial square footage.
