What are some games I can play with just one hand? Recently got injured. Here come the porn jokes

Basically any turn based game

Turn-based RPGs are pretty disability-friendly. You can put the controller on a table and use both sides with one hand. Go emulate Mario & Luigi: Superstar Saga if you haven't played it.
If you have a Switch, Mario Kart 8 Deluxe's tilt controls let you play the game with your right hand. You only need your left for items.

Trails of Cold Steel, be warned that the game will require key presses, but it can be played with one hand.

Doom and most other Doom-engine games.

One Finger Death Punch. I played that game the whole time my hand was injured once. Also if you don't think you can fap with your non-dominant hand, you will be surprised.

I thought we had a QTDDTOT.

SRPG's on the phone. I've been playing fire emblem on my phone mostly one handed for some time.

Wario Ware and some rhythm games should also work too. On the 3ds I think some RPG's work completely well with the touch screen

I heard you could bind Gothic 1 and 2 to be playable with only one hand, but never actually tried it.
As other have said, turn based games are your friend and I would also add point and clock adventure games, as they mostly need the mouse.

I was about to suggest Toribash but it turns out you can't rebind keys. Pity, all you need to play efficiently is ZXC and camera panning+zooming.
